The people have asked and we are delivering - our most requested recipe for 2025 (other than the gnocchi).

Here is our chilli jam recipe for your next weekend cooking project - it's a great Summer recipe when your chilli plants are heavy with fruit or your local market has chillies on special.

These quantities we've given make about 1 litre of chilli jam, but the recipe can easily be scaled up or down.

At the restaurant we serve this with our pizzas. You can also stir it in noodle soup, fried rice or laksa - really, the opportunities are endless.

Just remember to keep the windows open when you're cooking it!

Method:

Add the chillies, onion, garlic and oil to a food processor and blend to a paste (you may need to do this in batches).

In a med-large saucepan, cook the paste very slowly over a long time until it has reduced to a deep, dark red colour.

Add the brown sugar and soy sauce to taste, then cook for a further 30 mins.

Store in sterilised jars.
