Even though September is mere days away, down here in the Limestone Coast it doesn't appear that we'll be swapping puffer jackets for t-shirts anytime soon. Whilst our bodies could do with a top up of Vitamin D, we're not mad about having slow cooked dishes on high rotation to help beat the Winter Blues.
At the restaurant, we're serving this braised lamb with wood roasted broccoli, candied almonds and almond cream (pictured above). At home, barbecued broccoli (or broccolini) and buttery couscous (we love using Moghrabieh couscous) is sure to please.
This lamb pairs particularly well with spicy, medium bodied red wines like our Coonawarra Shiraz and Padthaway Graciano.
Method:
Start by combining the salt and ras el hanout in a bowl, mix together and rub over the lamb shoulder. For maximum flavour and best results, leave the lamb in the fridge overnight.
Preheat your oven to 150c.
In a tray, place the lamb, vegetables, herbs and stock. Cover with baking paper and foil, place in the oven and cook for around 2.5 to 3 hours until it's 'fork tender'. Remove the foil, and cook for another 10 - 15 minutes until the lamb is coloured.
Once coloured, remove the lamb from the tray and leave to rest.
To make the sauce, strain the cooking liquid through a sieve into a pot. Skim the fat, then boil and reduce. Once reduced, add the lemon juice and season to taste.
Serve with buttery couscous and charred broccoli and a glass of Ottelia's Coonawarra Shiraz or Padthaway Graciano.
